I get most of these chopped veggies off the salad bar at the grocery store to save in chopping AND waste. Feel free to be adventurous and add whatever veggies you like.
Brown chicken until cooked through; drain out any grease and pat dry with paper towel.
Add all raw veggies and saute' with meat 3-4 minutes. Add broth, water, tomatoes and beans. Mix thoroughly
Add seasonings and bay leaf; bring to a boil. Cover and turn down heat to simmer for 20-30 minutes.
Top with sprinkle of cheddar cheese, parmesan cheese or a few avocado slices.
