Cook squash in oven or microwave until tender. I used the Instant Pot and cooked for 8 minutes on high pressure. Scoop out squash shreds and set aside.
Brown meat, drain and set aside.
Saute minced garlic and chopped veggies in olive oil until tender. Stir in pesto. Add spaghetti squash and meat and combine. Season with salt to taste. Let simmer for 10 minutes.
