These muffins make a great “meal” to include a protein, starch and veggie!  What a great way to start the day as a breakfast!

Each serving is 3 WHOLE muffins.  Indulge in that!

The whole batch makes 2 servings.

Combine eggs, carrots and vanilla

Stir in oats, baking powder and cinnamon.

Place into 6 greased muffin tins and bake 350 degrees for 15 minutes or until done.
