It seems almost crazy that we’re busier now than we were when we were younger. Have you noticed that?
Even though our kids are independent and living on their own, do you find yourself running all day with work and home, maybe a few extra social event, and once again there’s no time for yourself? Add in some hormones changes and decreased metabolism and you might not recognize yourself anymore.
The good news is, there’s a solution. Turning our bodies back to a “fat burner” from a “fat storer” take a few changes to make the wheels all work together and one of those changes is meal planning.
I don’t know about you, but my meal planning used to be fairly regimented when the kids were home. Now it’s much less detailed, but important, nonetheless.
I eat the same things most days for breakfast and lunch, so I just have to plan a few snacks and dinner. I like to cook extra on the weekend (do you even cook on the weekend anymore?) and eat the leftovers in various forms during the week. I don’t like to take the extra time to cook during the week and am happy to grab some leftovers! Please don’t tell me you hate leftovers!
I recently bought an “Instant Pot” and have been experimenting. This Italian chicken recipe is so good! The leftover variations are endless:
Serve with whole grain pasta
Serve on a pile of spaghetti squash or zucchini “zoodles”
Put in a low carb wrap for lunch
Eating regularly, cutting back on starchy foods and watching overall portions of food will help to stop the middle age weight gain. Finding recipes like this makes it fun!
